Please note: Our sea urchin comes from the coast of Galicia, Spain, where the species produces smaller, darker, and slightly firmer roe than the large, buttery ones typically found fresh in the U.S. This is a preserved delicacy, gently packed and sterilized to last up to 5 years in your pantry—an entirely different experience from fresh uni, but one that’s deeply prized in Spain and across Europe for its rarity and rich, briny flavor.

Occasionally, you may notice small hard bits in our sea urchin roe tins. These are not sand or shell but crystallized sea urchin protein formed during the sterilization process. This occurs because minimal water is added to preserve the high concentration of roe in each tin.
